Eating salad everyday will provide your body with a whole lot of powerful antioxidants that are needed to fight off diseases. Raw vegetables in particular provide you with the most minerals, vitamins and enzymes needed for optimal health. This is because vegetables can lose some of their nutrients when cooked. The best way to incorporate raw vegetables into your diet is to make salads.
I feel so much more energetic when I eat more raw foods, and my skin glows. Asides from this, my favorite thing about eating raw foods is how it effects my intuition. When eating junk food, drinking alcohol and consuming gluten I feel that my brain is hazy and I cannot think straight. When I eat clean food my brain is clear, I am more focused and I see the world differently. It helps me with my yoga and meditation practice more then I thought.
This salad incorporates raw vegetables, leafy greens and protein to keep you full and energised for hours. It is great for anyone detoxing, looking to increase more vegetables into their diet and anyone looking for a delicious meal!
Detoxing Green Vegan Salad
3 cups baby spinach
1 zucchini (grated)
1 cucumber (diced)
1/2 Spanish onion (thinly sliced)
1/2 cup green beans (cut into 1 cm long pieces)
1 tablespoon sesame seeds
1 cup tofu (Find how I make my tofu here)
2 tablespoons dried cranberries
1 tablespoon coconut aminos (Find out what coconut aminos is here)
1 tablespoon extra virgin olive oil
Juice from half a lemon
1) Prepare your tofu.
2) Prepare all salad ingredients.
3) Add all ingredients into a bowl.
4) Prepare salad dressing by whisking all ingredients together in a small bowl.
5) Pour salad dressing onto salad ingredients and toss together.
