Vegan ‘Bounty Bars’

In Australia we have a treat called a ‘Bounty Bar’. It is essentially moist, sweet coconut in milk chocolate. They are good. They are very good. When I used to own a car I would purchase one every time I got petrol. It became a dangerous habit. But, what else is good are these raw vegan bounty bars that I made today. Inside is also a moist coconut filling covered in smooth dark chocolate… They aren’t that dangerous either!

These vegan ‘Bounty Bars’ are also really easy and fun to make, and require minimal ingredients (which is right down my alley). My housemates and myself enjoy them after dinner (I made a vegan lentil and sweet potato coconut curry for dinner- recipe coming soon) on our beautiful balcony at dusk with a glass of wine!

Vegan ‘Bounty’ Bars

Makes 10 bars

Ingredients for filling
2 cups shredded coconut
2 tablespoons coconut cream
1 tablespoon coconut oil
1 tablespoon agave syrup

Ingredients for chocolate coating
100 grams vegan dark chocolate (I used Lindt, 70% cocao)
1 tablespoon coconut oil

1) In a food processor blend together all ingredients listed in the ‘filling’ section. You want to make sure the filling is moist, but not so moist that it doesn’t stick together. If you find the filling is too dry then add more coconut oil. If you find the filling is too wet, then add more shredded coconut.
2) Roll the mixture in 5cm by 3cm long bars with your hands. Place them onto a plate or a board and put them into the freezer for 10 minutes or until they have hardened.
3) Once the bars have hardened melt the dark chocolate in a double boiler (aka a bowl over simmering water).
4) Add the coconut oil into the melted chocolate and stir.
5) Dip the coconut bars into the melted chocolate and coat evenly.
6) Place the bars back into the fridge for 15 minutes or until chocolate is set.
