I was cleaning out my pantry a few days ago and realised I had a lot of coconut butter that I haven’t used. I decided to use it up, and I’m extremely happy that I did. These Vegan Coconut Bliss Balls are one of the best raw desserts I have eaten, and they were almost too easy to make (no food processor involved).
I wasn’t going to post a blog about these because I wasn’t sure how they would turn out. But, on New Years Eve I bought them out for some friends to eat and we were all blown away by how good they tasted. So, I thought I’d share the recipe with you all. They have a smooth and creamy texture, they taste very similar to white chocolate and are good for you!
With half of the mixture I mixed in frozen raspberries, and they were just as delicious as the normal coconut flavour. Next time I will try other flavours such as lemon and dates.Β You can keep these in the fridge or freezer and bring them out when you need to sort out that sugar craving.
Vegan Coconut Bliss Balls
My mixture made 10 bliss balls (I would suggest doubling the quantity)
Ingredients
4 tablespoons coconut butter
1/4 cup shredded coconut (plus extra for rolling)
3 drops vanilla extract
1 tablespoon agave syrup
1/4 cup frozen raspberries (optional)
Method
-Melt the coconut butter for 1 minute (either in the microwave or over a stove top) or until the butter is runny.
-Put the melted coconut butter in a bowl, and add in the shredded coconut, vanilla extract and agave syrup.
-Refrigerate mixture for 3-4 minutes until it starts to become solid again.
-Divide half the mixture, and mix in the frozen raspberries into one half(optional).
-Roll the mixture into balls (use moist hands for a smooth ball).
-Roll the balls in the shredded coconut.
-Place bliss balls in the fridge and let them cool for 30 minutes before indulging.
