Vegan Scrambled Tofu Breakfast Tacos

This time of year has me eating a whole lot of bad food! I have been over working and in my spare time I have been attending a whole lot of Christmas festivities. I find it easy to slip out of my routine and into a downward spiral of bad eating and partying this time of year. Although it is still important to live life and enjoy yourself, I found I need to keep it balanced. Easy dinners and breakfasts that are healthy are my go to. I also try to practice yoga daily, even if some days it means for 10 minutes.

Vegan Scrambled Tofu Tacos

This morning I whipped up some easy tacos that you can eat for breakfast, lunch or dinner. It was so tasty and so easy!

Vegan Scrambled Tofu Breakfast Tacos
Makes 6 tacos

Processed with VSCO with c1 preset
Scrambled tofu mixture

1 block firm tofu (broken/cut into small pieces)
1 tablespoon ground turmeric
1 tablespoon cumin
1/2 red onion (diced)
7 small mushrooms (sliced)
Salt and pepper to taste
1 teaspoon coriander (I used fresh)

Extras
Avocado (sliced)
Tomato (diced)
Baby spinach
Relish (I used mango relish)
Flour tortillas

 

Method
Heat 1 teaspoon of oil olive in a large fry pan.
Saute the onion and mushrooms until soft.
Add in the tofu and saute for about 5 minutes.
Add the turmeric, cumin and coriander and mix together until everything is coated.
Heat tortillas in a warm fry pan for 1 minute each side.
Put the ‘extras’ on the tortillas and top with the scrambled tofu mixture.
