Howdy, hello and hi. Let’s chat sesame seeds. The little seeds that add a pop in your mouth are my new love! They are considered one of the worlds healthiest foods because of the high vitamin and mineral content. They are a great source of magnesium, calcium, zinc, iron etc. Check out the chart attached. Sesame seeds are also really easy to use. You can add them to salads, sprinkle on toast, use in tahini form, add to bread, cakes and biscuits. I used them in this extremely easy vegan noodle dish that I whipped up for dinner.
Vegan Sesame Noodle Bowl
Packet of udon noodles
Coconut aminos (can use soy sauce or tamari)
Ketchup manis (optional, can use normal ketchup)
-Boil udon noodles in water for 8 minutes
-Steam broccolini for 5 minutes
-Saute mushrooms with shallots and onion with 1 tablespoon of olive oil, garlic and ginger for 5 minutes
– Add broccolini in with mushrooms and saute for a further 5 minutes
-Drain the noodles
-In a sauce pan add in 1 tablespoon sesame oil, 1 teaspoon of chili paste, 3 tablespoons of coconut aminos and 1 tablespoon ketchup manis.
– Mix sauce through noodles and add 1 table spoon of sesame seeds
-Put everything in a bowl
This noodle bowl was so tasty and nourishing! It had amazing Japanese flavours and took about 10 minutes to make. I’m so obsessed with easy vegan dishes at the moment. Life doesn’t have to be complicated.
