Smashed Chickpea & Avocado Sandwich (Vegan)

Hope you have all had an amazing week! The weekend is here, and the Australian sun is shining. But, for some of us, its means we have to work. I have spent my Saturday working, and that means I was very close to calling Ubereats for dinner. Ahh, the convenience of food being delivered to your door. I refrained from the convenience and opted for making something quick and easy. This sandwich turned out to be nourishing, tasty and took 5 minuted to make. So perfect for a quick dinner. I had to share!

The sandwich contained chickpeas (and not in hummus form, woah), and because of that it was full of plant based protein and fiber. The avocado and lemon added the creamy and zesty factor that provided me with all the healthy fats I needed. To finish it off, theΒ  lettuce and sprouts added the crunch, so it was really satisfying and fresh to eat.
