The weather effects my mood dramatically. It usually controls what I eat and how I feel. This morning I woke up and Sydney was covered with thick grey skies that were producing a lot of rain. Although I had nothing to do today and it was nice to be inside, I found myself wanting to eat comfort food. My diet has been thrown off the past few days with work, so instead of binging on unhealthy food I made some healthy vegan pancakes.
These vegan pancakes were so delicious, and I was super impressed with how they turned out. The topping actually blew my mind with how good it tasted too. Definitely worth making. Not only are they delicious, but they are packed full of protein, vitamins and minerals and good carbohydrates. Chocolate, Nut & Banana Vegan Pancakes
Ingredients for pancakes:
1/2 cup oats
1/2 cup organic flour
1 teaspoon coconut butter
1/2 cup almond milk
1 tablespoon raw cacao powder
1 ripe banana
Process the oats, flour and cacao powder in a food processor until oats are blended into a fine powder.
Add in the banana, the almond milk and coconut butter.
Process all ingredients until batter is smooth.
Heat frying pan with coconut oil.
When the pan is hot, spoon in 1 and a half tablespoons of batter to make a pancake.
Cook the batter until bubbles start to form on top, and then flip.
2 tablespoons hulled tahini
1 tablespoon organic maple syrup
Nuts of your choice- I used pistachios and walnuts/
Fruit of your choice- I used banana and blueberries
Mix the hulled tahini and maple syrup together in a bowl. Add some hot water to thin out the mixture. Drizzle on top of pancakes.
Add fruit and crushed nuts on top also.
