Raw Lavender and White Chocolate Vegan Cheesecake

It is packed full of nuts, dates and coconut butter so it will fill you up, provide protein and minerals, and satisfy your afternoon sugar craving.

This raw vegan cheesecake is also so easy to make (no baking required), and because of the subtle lavender flavour, it is different to anything you usually eat! The magic also comes from the coconut butter which gives it the white chocolate flavor. No wonder everyone is in love with raw desserts, they are so amazing and don’t leave you feeling sick at the end.

Raw Vegan Cheesecake!

Raw Lavender and White Chocolate Vegan Cheesecake

Prepare:
Use coconut oil to grease the inside of the cake tin (can use a muffin tray too if you want individual cakes). Then use baking paper to place in the cake tin. Grease again if desired to avoid any sticking.

Base:
6-8 fresh dates
1 cup mixed almonds and walnuts (use any nuts you like)
3 drops vanilla extract
Sea salt
Β½ teaspoon coconut oil

Blend all the ingredients together in a food processor until the mixture is sticky and balls together. Stick mixture down onto the bottom of the cake tin to form the base. Freeze the base.

*Meanwhile*

Mixture:
2 cups soaked raw cashews (the longer you soak, the smoother the mixture)
ΒΌ cup maple syrup
Sea salt
3 table spoons coconut butter (I added 1 teaspoon of water to the coconut butter to make coconut cream)
1 teaspoon coconut oil
2 table spoons dried lavender buds
3 drops vanilla extract

Blend all ingredients together in a food processor until the mixture is smooth. Taste, and add any other desired ingredients (lemon juice is nice for some zesty freshness). Put the mixture onto the base and smooth out evenly. Freeze for a few hours before cutting up and garnishing.

Garnish:
Melted vegan white chocolate to drizzle on top
Dried lavender buds
Crushed nuts
Dried rose petals
