Vegan Jack Fruit Tacos

JACK FRUIT, woah. I have recently found my love for this fruit when I was in Bali getting served up ‘vegan BBQ pulled pork’ tacos in a funky cafe. Check our my blog post on the best places to eat in Seminyak, Bali if you’re heading over and want to eat some nice food. I decided to recreate and add my spin on these delicious tacos! This fruit not only looks like meat (somewhere in between chicken and pork), but has a meaty texture and a meaty flavour. It makes a perfect ‘meat’ substitute for vegans, vegetarians or anyone who likes trying different things!

Wait, the jack fruit benefits doesn’t stop there. Jack fruit is packed filled of nutrition, combining a plethora of minerals (magnesium, potassium and iron to name a few). It is also high in fibre and vitamins.

Let me take you on a taco journey… This honestly was one of the best things I have eaten in a while. Please let me know if you make jack fruit tacos. I highly recommend the salsa too. The combination of the sweet mango, creamy avocado and flavourful vegan BBQ jack fruit is a party in your mouth (yes, you are invited).

EmmaEat’s vegan Jack Fruit Taco’s

 

Vegan Jackfruit Tacos with Mango and Avocado Salsa
Makes enough to serve two

Ingredients-
Pulled Jack fruit (AKA vegan pulled pork)

1 can jackfruit (NOT in syrup, mine was in brine)
BBQ sauce of your choice
1 tsp Cayenne pepper
1 tsp Paprika
1 tsp Garlic powder
1 cup vegetable stock (water is okay too)
1/2 brown onion

Method-
Drain and rinse jack fruit.
Squeeze out any moisture with paper towel.
Cut into smaller pieces.
Add the cayenne pepper, paprika, garlic powder, salt and pepper onto the jack fruit.

 

 


Sauté the onion with olive oil, and then add in the seasoned jack fruit.
Sauté for 3 mintes.
Add half a cup of vegetable stock and simmer for 5 minutes.

 

 

Place the jack fruit onto a baking tray and into the oven for 5 minutes.
After 5 minutes add 1/4 cup of BBQ sauce (at this stage I added more water to make it extra saucy).
Bake for a further 10 minutes or until sauce has thickened.

 

 

Salsa-
1/2 mango
1/2 avocado
1/2 Spanish onion
1 Tomato
Fresh Coriander
Lime juice
Fresh chilli (optional)

Method-
Dice all ingredients and then squeeze lime juice on top and mix.

Tortillas
Corn
Baby spinach

  2. There use to be a restaurant where I live that made a great jackfruit bbq sandwich. I was so bummed when they unexpectedly closed down. Have been wanting to recreate at home, but wasn’t sure about working w/ a fresh like what I’ve seen in the health food store. Hope I can find some in brine. THANKS! I want some right NOW! 🙂
